Pan grilled prawns on shitake mushroom beds

Today i received the freshest ever mushrooms I've set my hands on. (Thank you to a kind lady who sent me these! ) I didn't want to just chop it up and make it into a stir fry. I wanted to savor its entirety. I thought about tiger prawns and how it would make a beautiful marriage. It felt like i was dining out and what would have been perfect was a chilled glass of Reisling to pair it with. My dinner for tonight: Pan grilled prawns on shitake mushroom beds.

1.Heat your grill pan to a medium heat. Spray with some olive oil, add garlic and some ripe mangoes. Add your mushroom caps ,Sprinkle with balsamic vinegar.Move your mushrooms around to coat with the other ingredients. Leave til mushrooms are just cooked, turning once. Season with some salt and pepper.

2.Remove mushrooms from pan and place on a plate.Sprinkle each mushroom with some dried tarragon or a leaf of fresh tarragon, I used fresh.Place shrimp on mushrooms, fixing in place with toothpicks. Add freshly cracked pepper and salt.

3. Place in a baking tray and Broil in oven for 3-5 mins. Or you can pan grill it too. the juices of the prawns will be absorbed by the mushrooms. And with that hint of tarragon.. it just felt so gourmet!
